I just learned about a nice resource offered by PBS’ Online News Hour called China Prepares For 2008 Olympics, and I’m adding it to The Best Sites To Teach and Learn About the Olympics.
It has several good features, including some interactives and lesson plans.

The Olympic stadium slideshow is neat!
I just finished a second blog post on EFL Classroom 2.0 with a list of all the best Olympic moment videos. Also, a whole resource area devoted to Olympic materials. Bingo / BAAM game / Jeopardy / Olympic project materials / presentations.
You’ll have to be a member to get/see but well worth it. I highly recommend teachers using the Olympic Project I created. Students fill out the project sheets for their country and present about that country’s Olympic background. Even guess the medal count!
